We fish lobster in the Wild Islands, located on the Eastern Shore of Nova Scotia, Canada. Our quality surpasses all other Canadian brands for flavour due to the specific time it is harvested and of course, the pristine ocean waters of the Wild Islands Archipelago. Under strict environmental regulations, we use hand built wooden traps to harvest the worlds best tasting seafood.

The lobster you are eating grew up slowly in the cold salty waters of the wild island archipelago on Nova Scotia’s eastern shore. Chilled by the North Atlantic current, Nova Scotia’s eastern shore is home to some of the coldest year-round ocean temperatures in the maritime provinces.
Your lobster is over 10 years old and has already had a chance to reproduce before it was harvested. It fed itself on a totally fresh, wild, live diet of clams, crabs, urchins, snails, scallops, mussels, juvenile fish, and even shrimp.
After a long winter of eating and growing to fill its shell with the most royal of lobster meat , it was harvested in a zero impact, hand built wooden lobster trap or creel.
Chris Snow is a fourth generation lobster fisherman in the same area of the Eastern Shore of Nova Scotia. He started out fishing with his Dad before school when he was 14 years old, back in 1984.
A very conscientious lobster fisherman, he builds his own lobster traps out of local hardwood and hand selects the most premium lobsters for the Wild Islands label.
Best cooked in boiling water salted with salt from its own ocean to a salinity of 3.7% or about 4 grams per 100mL water. Boil for 15 minutes for a crisp flavour.

If you are eating a wild islands lobster in months other than April through August, you might be eating a counterfeit.
Wild Islands quality cannot be found outside of those months. We only fish them in April, May, and June.
